Cool Off This Summer With Iced Coffee Popsicles

It’s here! August, the hottest month of the year has arrived and when you live in the south, you’re always looking for a way to stay cool. I’m not much of a hot coffee drinker but I do love iced coffee. It’s perfect when I start feeling that afternoon lull that always seems to hit around 3:oo each afternoon. I don’t have time for a nap so I head downstairs for something cold and refreshing to perk me up.

I usually make my iced coffee from scratch which is kind of a pain because the coffee is always initially hot. By the time I add ice to cool it down, the coffee is way watered down and just doesn’t taste the same.

I’ve tried to remember to make it in advance but I forget more often than I remember. I didn’t realize the folks at International Delight had a tasty solution for this problem until recently when I was asked to try their iced coffee. Before I headed off to the market to purchase some, I did a little research and discovered International Delight offers four flavors of iced coffee: Original, Vanilla, Mocha and Caramel Macchiato. They all sound ridiculously good, don’t they?

 

They also come in a “light” version. I may try those next time but for my first time trying this iced coffee, I decided to go with one of the ones above.

 

I decided to give the vanilla and mocha a try and I can unequivocally say, they are yummy! You can see the mocha flavor is just a little darker than the vanilla. I would be hard-pressed to choose a favorite, they were both delicious!

 

Then I got an idea, a frosty summertime idea! What if…

 

Can you see where this is headed? The only thing better than iced coffee on a hot summer afternoon is a mocha or vanilla iced coffee popsicle! 🙂

 

You can find these little ice pop makers in many home stores, even in the grocery store sometimes. I found these in my local dollar store.

 

I popped them into the freezer and they were ready in just a couple of hours.

 

They are sooo good, like a rich, coffee dessert. Cool and refreshing too, great as we enter the hottest part of summer!

Another idea you may want to try, freeze International Delight coffee in ice-cube trays and use those as ice when enjoying a glass of iced coffee. That way you won’t have to worry about the ice diluting the rich flavor of your iced coffee drink. I love that idea!

    have milk in it? As I am lactose intolerant am sure hoping not!

    • Alyce, I just checked and under ingredients it does list skim milk and cream. Sorry about that. I wonder if the lighter version has milk in it. I didn’t buy that kind so I’m not sure.

    • Shelly, I just looked under their FAQ section and here’s what I found:
      How much caffeine is in International Delight Iced Coffee compared to other caffeinated drinks?
      International Delight Iced Coffee and Iced Coffee Light flavors have 55-65 mg of caffeine per 8-ounce serving. Unsweetened Original Iced Coffee has 52-62 mg of caffeine per 8-oz serving. For comparison, there are 50 mg in other leading iced espresso drinks, 47 mg in brewed tea and 23-30 mg in leading soda brands (also per 8-ounce serving).

    Wow, what a great idea! I had no idea that ID had pre-made iced coffee. I’d like to try that – sometimes its so messy to make your own.

  9. It’s not hot here but that’s no excuse. I’d enjoy these year round, especially the Caramel Macchiato.
