Watermelon Mojitos For A Summer Party

I was out of town until Monday evening and since I wasn’t able to create a table setting, for this week’s Tablescape Thursday, I thought I’d share something I made last week while visiting my son and dil. It’s at least table related, a yummy summertime drink I came across at Pottery Barn that can be made as an adult beverage with rum, or minus the rum for a kid-friendly version. This would be a fabulous drink for a 4th of July gathering.

I followed the recipe to the letter when I made it, but when I typed up the recipe for you below, I changed one thing in the instructions…something that bothered me when I made it. The directions at the PB site have you muddling the mint after adding in the blended watermelon. Have you ever tried to muddle mint while it was floating in a sea of liquid? I gave up after just a few seconds, it was hopeless!

So when I make this recipe again, and I’m sure I will for a party this summer because it’s delicious, I will muddle the mint with the lime juice and simple sugar, before adding in the blended watermelon. I think that will be a lot easier. If the lime juice and simple sugar isn’t quiet enough liquid for muddling, I’ll add in a very small amount of the blended watermelon, but I don’t think that will be necessary.

Watermelon Mojitos

 

Wouldn’t this drink be pretty for the 4th of July with a little flag sticking out of the straw, or stuck into the watermelon slice. 🙂

Watermelon Mojitos

Perfect for a summer party, this drink can also be made as non-alcoholic. This recipe yields 4 servings.

Servings: 4 Servings

Ingredients

  • 16 Mint Sprigs
  • 2 Limes juiced
  • 2 oz Simple Syrup
  • 2 cups Seedless Watermelon cut into 1/2 inch cubes. (Save 4 wedges for garnish.)
  • 8 oz of White Rum
  • 2 Cups of Ice
  • 1 Can of Club Soda When making non-alcoholic, replace the club soda with Sprite.

Instructions

  • In a glass pitcher, combine 12 sprigs of coarsely ripped mint leaves, juice from 2 limes, and simple sugar.
  • Muddle until mint leaves are broken down.
  • Blend watermelon cubes and add to the pitcher.
  • Add rum, club soda, and ice cubes. (For non-alcholic version add Sprite and ice cubes only.)
  • Stir.
  • Pour into mason jar mugs.
  • Garnish with watermelon wedge and a sprig of mint.
  • Enjoy!

Notes

A "Simple Sugar" recipe is 1 part water to 1 part sugar. Example: 1 cup of sugar mixed with 1 cup of water. To make simple syrup or simple sugar, combine the desired amount of sugar and water in a small saucepan. Bring it to a boil to dissolve all the sugar, then set it aside to cool.

    • Rosie, I thought the same thing when I started getting sick on Monday night. I can’t imagine driving through that while feeling like this. I couldn’t have done it. I feel like I’ve been run over by a train. My son told me he is feeling better today but I’m definitely not. Maybe he’s built up a little immunity from living with a baby/toddler. This is the first flu bug I’ve had in ages…maybe it hits you harder when you haven’t had one in a while.
      You will love it…it’s so refreshing! I loved the flavor when we had one evening.

    • I knew it was a mistake when I poured it in but I just went along with the directions. Definitely doing it differently next time.
      I love them, too. During the holiday weekends here like Memorial Day or 4th of July, I’ve had to drive to three different stores to find mint. The grocery stores never stock enough for the holiday weekends. So buy ahead when a holiday is coming up!

    A friend has the same thing all of a sudden and she left yesterday on a much planed trip, sick and all, she went to a quick clinic for drugs/ meds Z pak or C pack ?

    You may need to visit a quick clinic for some meds ?

    • Janice, I was thinking today, what would I do if I got sick like this right before a trip or vacation. That would be awful! I sure hope your friend gets to feeling better really fast! If I don’t feel better by tomorrow, I’m going to at least go for a strep test.

    Susan, how awful to come home and get sick but better than on that drive home or while you were with your family. I hope you are better soon. This recipe sounds scrumptious. Maybe as good as an Amaretto Sour!!! I have some watermelon in the fridge that I cut up last night. Hmmmm….guess what I will be trying this weekend!!! Thanks!

    • Thanks, Gina! I found that in Marshalls, just before leaving for the trip to Ohio. They had it in three sizes. I purchased two of them and really love them for outdoor entertaining. So check your Marshalls, hopefully they will have them in, too.

  18. Hope you are feeling better soon. Just wondered if you can grow your own mint? We contain it in our garden as it can be invasive. It is lovely and many different kinds, saving money instead of purchasing. It is a perennial here in Minnesota. Will try the drink soon, sounds delish!

    Susan I finally got my Star napkins from the pottery barn! I’m so excited. I then got red stripe and blue strips plates and bowl from Dollar Tree. See I’m learning. I probably spent a total of $50 on it so far. Just need to get a small navy checked runner to kind of tie in the summer theme. Or red large check. What do you think? My next theme to work on is the Nautical one for August. Of course September is all about football so that is already done. I have even been scoping out pillows to tie the living room and dining room together for each change.

    Anyway, I wanted the ladies to know that we marked down the denim napkins both light and dark as well as some other ones. We must be getting ready for fall/winter. (Already?) LOL! have a great weekend!!

    • That sounds wonderful…your tables are going to be beautiful! I haven’t been in Dollar Tree in a while, I need to make a visit. Thanks for the heads up on the sales. Jeri, about a year ago I found clear football shaped glasses in Dollar Tree. I don’t know if they still have them now, but you may want to look for them as it gets closer to Football season. I haven’t used mine in a table setting, yet.

I had included it in the recipe but I guess the plugin I use to create the printable recipe isn’t working right, because it doesn’t show up where it’s supposed to in the recipe. So I just added to the description. I’m glad you mentioned that Cyndi, I hadn’t noticed it was doing that.
