Happy Monday! Hope you had a great weekend! If you’ve been reading BNOTP for a while, you know cooking is not one of my fave activities. Love to eat, but not so much to cook. I do like it when I come across something that’s healthy, tastes great, and that I can prepare quickly. I’ve always liked roasted Brussels sprouts and sometimes buy them already cooked in the frozen section. Recently, I decided to try roasting fresh Brussels sprouts in the oven thinking they would taste even better–and they do! Freshly roasted Brussels sprouts is so much better than the frozen kind!

Initially, to cook them, I washed them, peeled off any outer leaves that looked yucky, cut off the stems, then roasted them in the oven as a whole. Typically, I would need to roast them for around 45 minutes at 350° before they were tender. Then I came across this cute little Brussels sprout cutter and realized cutting them in half is a thing you do. lol I figured it would help speed up the cooking time, and it does!

The cutter is super easy to use, you just place the spout inside with the stem side toward the corner with the extra cutting blades–then press down.

Here’s how your sprout looks afterward. I’ve been tossing the leftover stems and leaves out into the yard for the bunnies who visit occasionally.

To roast them, I spread them out on a cookie sheet, baste them with a little avocado oil and sprinkle them with a bit of pepper and the tiniest amount of salt. I bake them at 350° for around 30 minutes. I call it roasting them but I guess I’m really baking them. I didn’t think to take a photo after they were roasted, but I’ll do that and add it to this post when I make them again this week.

The last time I made them, I pulled them out after about 20 minutes and removed the really small sprouts that looked already done, along with any little leaves that had fallen off and crisped up.

This is the cute little Brussels sprout cutter I use to cut the sprouts before roasting them and it does a great job. Cutting them in half definitely helps shorten the cooking time and I love how this cutter cuts the sprout in half and removes the stem all in one motion. I prefer to use it directly on my cutting board, instead of putting the sprout inside, but the container does help to hold it in place a bit better. How do you roast/bake Brussels sprouts when you make them? What temperature do you prefer to cook them at and for how long? How do you season them? I can’t get over how sweet they taste once they are roasted! They have become my favorite snack during the day. Recently, I cooked an entire package of “Boar’s Head Traditional Bacon” in the oven, then stored it away in a zip lock bag in the fridge. One of my favorite snacks now is 4-5 roasted sprouts along with 1 slice/piece of bacon. I reheat them together on a plate in the microwave for about 30 seconds and the combination of the bacon flavor and the Brussels sprouts is soo good! I find it’s also a very filling snack that keeps me satisfied for a long time, much better than when I eat a carb-laden snack. I bet roasted sprouts would be great cut up in a salad with real bacon crumbled on top. Yum!

  1. Oh, this sounds good. I love that tool! It would make preparing them so easy and save so much time. I might actually make brussel sprouts more often, lol. I didn’t develop a taste for BS (ha!) 😀 until later in life. I thought they were cute, but tasted terrible. Now I love them, but rarely cook them. I’m looking forward to hearing how others cook theirs. And bacon makes everything better. Thanks for the tip on the tool, Susan.

    • It does save a lot of time. I actually use it right on the cutting board instead of inside the little box and it goes really fast. You just have to make sure you have it positioned right if you use it without the little box/container. Fun to do, too!

    Ina Garten has a recipe for oven roasted cauliflower
    & Brussels sprouts which can make any one love vegetables. She does all the steps you mentioned then removes tray from oven, sprinkles parmigiana
    Cheese and Gruyère cheese on top. Puts back in oven for 2 minutes. Heavenly
    I love both vegetables, and have been roasting them for years.

  3. We just had brussel sprouts last night! Tried a new recipe…Boil them for 10 minutes, cool, dry off , cut off the root end and cut in half, get rid of some discolored leaves. Put on baking tray, drizzle a little olive oil, toss on some chopped garlic, dried thyme, a little parmesan and cheddar (vegan for me, regular for hubby) and roast at 425 for 20 minutes. Excellent. This was easy. It is simple to cut them with a knife.

  4. I toss the sprouts in some olive oil , maple syrup, bacon cut into bite size pieces and roast in the oven at 400 for 20-25 minutes. You can substitute balsamic glaze for the maple syrup. The same method works for roasting carrots.

    I love roasted brussel sprouts! I cut them in half, toss in olive oil & fresh ground pepper. Sometimes I add bacon but always sprinkle a little parmesan cheese. I favor fresh over frozen brussel sprouts.

  6. I buy frozen Brussel sprouts at Trader Joes. Put them on a baking sheet…toss with a little olive oil and coarse Kosher salt. Oven preheated at 425…bake 7 minutes…toss them around and bake for another 7 minutes….Delish

  7. I roast brussel sprouts in my air fryer (the same Ninja you have…I bought it on your recommendation…and love it). Rinse, trim, cut in half, mist with olive oil, salt and pepper. 375 degrees for 10-12 minutes (shake after five minutes). Delicious.

    • I don’t know why I haven’t thought to use my air fryer since I use it for so many other things. I will def try that, would save a lot of time, I’m sure. Thanks for sharing how you prepare them, Sharon!

  9. I roast all my vegies, cauliflower is sweeter tasting too when roasted, doesn’t even taste like cauliflower as we know it. I love getting a pan full of vegies, like, asparagus, broccoli, cauliflower, peppers, sweet potatoes, brussels sprouts, etc….like you, put avocado oil on them with garlic powder/salt, onion salt and pepper. Place them in the oven and roast at around 375 or 400, depending if I’m using the convention roast. I place the veggies on a salad cold or heat them up for a meal. Love roasted vegies!     • I’ve never cared for cauliflower but I think I’ll try it roasted. I bet I owuld like it a lot more that way. I should definitely try some other veggies now that I know a quick way to fix them that doesn’t involve me standing there cooking them. lol

  10. I now roast all my veggies in the air fryer. So much quicker and you don’t have to heat up the oven. As far as the Brussels sprouts go, after removing from the air fryer I sprinkle on some freshly grated Parmesan. Delicious! Never thought to add bacon-yum!

    • That would be nice, now that summer is here. Don’t need any extra heat in the house. I’m def going to try cooking them in my air fryer…great idea!

    Glad you made these discoveries, Susan! Roasted brussels sprouts are great. I use avocado oil a lot, especially for high-heat cooking, but since you’re roasting the sprouts at 350 degrees, you could use extra virgin olive oil for a bit more flavor, as well as a small amount of kosher salt rather than regular table salt. Also, I use parchment paper rather than foil b/c the sprouts don’t stick to it.

    In case you didn’t know, you can roast almost any vegetable this way–green beans, carrots, asparagus, for example. Roasted asparagus is delicious! I typically roast my veggies at 400 degrees for a shorter time than you roasted your brussels sprouts for. At this temp, asparagus cooks in only about 10 minutes. A sprinkling of parmesan on it right after it comes out of the oven makes it taste even more amazing.

    If you want, you can make an entire meal on a sheet pan like what you used for your sprouts–cut up chicken pieces (or a whole chicken cut in two, spatchcock style), potatoes, and other veggies all together. Almost no clean up required!

  13. Ive found soaking bs in water with a little salt for 10-15 minutes before roasting really helps!

    Susan, I use fresh sprouts , salt and pepper and toss with a small amount of olive oil. You can cut up the slice of bacon and roast it with the sprouts. I also will roast a mix of vegetables the same way, sometimes I add a little bit of steak seasoning. If you roast green beans you can do them until they are crisp and they’re a snack like potato chips. I always use the high heat and shorter time that several comments above mentioned. Brussel sprouts aren’t a watery veg but if you decide to try other vegetables like peppers, onions etc. definitely go for 400 degrees so that you you do roast them not steam them. Enjoy your snacks.

    Try using Hidden Valley Ranch sprinkle on sprouts.

  17. Brussels are delish! An easy crowd pleaser every time is: 1 pound Brussels sprouts, extra-virgin olive oil, 3 tablespoons pure maple syrup &
    4 slices bacon, cut into 1/2-inch pieces, salt & pepper. Roast @ 400* until bacon crisps & the Bs are caramelized & tender. I’ve had guests & even a picky grandson say they would never eat brussel sprouts until they tried these!

    HI Susan, We love Brussel Sprouts here too! I roast them the same way, and to serve, add bacon bits, and a few dried cranberries to give a bit of sweet without much added sugars (the heat from the sprouts if enuf to warm the little bits of bacon and crans). The red and green is perfect for Holidays.

    My family LOVES brussels sprouts! Our favorite way to make them is boil for 5 minutes until soft. Then I cut them in half and spread out on a baking sheet. I sprinkle with seasoning salt (or whatever sounds good to me) and then sprinkle on a layer of panko crumbs and grated parmesan cheese. I put this under the broiler until golden. So yummy!

    I LOVE Brussels and they are so good for you ! Try them in the air fryer ! So crispy outside and tender inside. At 375 for about 15 mins depending on how big they are . Toss them olive oil first and sprinkle with salt, pepper, garlic powder if you like. Could throw on a little Parmesan cheese grated at the end

  22. My husband was not a fan of brussel sprouts until I tried this recipe. To the prepared sprouts add 1 or 2 diced apples, 1/2 thinly diced onion, 1/3 cup chopped nuts, 1 t. salt 1T. balsamic vinegar and 2 T. olive oil or avocado oil. Bake @ 400 for about 30 minutes. Remove from the oven and add 1 T. coconut oil and roast another 20 minutes. The last step could be skipped I think…the sweetness from the apple is really the key.

    All the recipes with parmesan and bacon sound really good too!

  23. I roast brussels sprouts the air fryer. They are a close 2nd to cauliflower wedges in the air fryer. You can roast just about anything in your air fryer that you normally roast in the oven. Just google air fryer recipes. Happy roasting!

    Susan,
    I wash and peel off outer leaves too. Cut Brussel sprouts in half, drizzle olive oil, small amount of kosher salt and fresh cracked pepper toss and roast on 350 until tender. To roast them do not over crowd or then they will just steam.

    Sometimes I will sprinkle a little bit of brown sugar on them in addition to the above ingredients. When brussel sprouts are done crumble cooked bacon on top.
