Watermelon Mojitos

Perfect for a summer party, this drink can also be made as non-alcoholic. This recipe yields 4 servings.

Ingredients

  • 16 Mint Sprigs
  • 2 Limes juiced
  • 2 oz Simple Syrup
  • 2 cups Seedless Watermelon cut into 1/2 inch cubes. (Save 4 wedges for garnish.)
  • 8 oz of White Rum
  • 2 Cups of Ice
  • 1 Can of Club Soda When making non-alcoholic, replace the club soda with Sprite.

Instructions

  • In a glass pitcher, combine 12 sprigs of coarsely ripped mint leaves, juice from 2 limes, and simple sugar.
  • Muddle until mint leaves are broken down.
  • Blend watermelon cubes and add to the pitcher.
  • Add rum, club soda, and ice cubes. (For non-alcholic version add Sprite and ice cubes only.)
  • Stir.
  • Pour into mason jar mugs.
  • Garnish with watermelon wedge and a sprig of mint.
  • Enjoy!

Notes

A "Simple Sugar" recipe is 1 part water to 1 part sugar. Example: 1 cup of sugar mixed with 1 cup of water. To make simple syrup or simple sugar, combine the desired amount of sugar and water in a small saucepan. Bring it to a boil to dissolve all the sugar, then set it aside to cool.
