From time to time my daughter-in-love, Nancy shares recipes with me. Nancy often finds recipes online that sound interesting, then adds or subtracts depending on what she has available or on hand.
Recently she made this yummy black bean salad and shared the recipe with me. I noticed it has an ingredient I’ve never tried: Trader Joe’s Island Salsa. Have you ever tried it? Black Bean Salad
An easy-to-make Black Bean Salad that makes a great side dish.
Servings: 4
Ingredients
- 1 can black beans
- 1/2 cup grilled corn (frozen or cut off the cob)
- 1/4 cup red onion, diced
- 1/2 red bell pepper, diced
- 1/3 cup cilantro
- 1 lime, juiced
- 2 tbsp avocado oil
- 1 dash sriracha sauce
- 1/2 cup Trader Joe's Island Salsa
- 1 tsp Salt/Pepper/Galic Powder (Season to taste)
Instructions
- Diced/chop all ingredients as listed above.
- Mix all the ingredients together in a bowl. If you like your salads a bit spicey, add some chopped jalapenos to the mix.

The only difference between this recipe and mine is I make a Cumin Vinegrette dressing and add avocado chunks… I am getting hungry so I will have to make it tomorrow!
I have made this for years as an appetizer when we have a group over. Just serve it cold with a bag of scoop chips and a cheese board and you are all set.
This looks so good. Will have to try this sometime, I’m getting hungry now! Lol
We make something similar, but we call it Texas Caviar. My recipe calls for 2 cans of black beans, but I always use 1 can of black beans & 1 can of black eyed peas. Instead of salsa, we use Rotel tomatoes. You can substitute several of the ingredients either to your liking or what you have on hand. We love this with the scoop chips!
